How we completed the assignment
The lunch supplier able wished for a sustainability strategy. Viegand Maagøe has helped the company throughout the project ’Increased Growth through Circular Business Models in SMEs’.
We started mapping able’s resources and established a road map with goals and milestones in the journey to sustainability.
To put in the right places, we developed a carbon emissions and expenses calculator that put numbers on a range of parameters for dishes at buffets:
- Material
- Amount
- Weight
- Price
- Machine washing
- Transportation
We have developed a circular business model and implementation plan for able by using the Business Model Canvas.

Circular economy gives results
The calculator has made able capable of advising clients about sustainable options regarding dishes at buffets. The calculator shows along with the Sustainable Bottom-line tool the environmental benefit of discarding the single-use dishes and switch them out with reusable dishes for circular lunches.

Besides the calculator able has gotten:

The interest from the clients is already great and able will from now on use carbon emissions reduction as a way to profile themselves in the market where there is an increasing demand for sustainable options.
